Preheat oven to 180°C (350°F).

Add plant milk, oil, sugar, vanilla extract, and lemon zest to a bowl and whisk until combined.

Sift in flour and baking powder, add a pinch of salt, and gently whisk for about 15 seconds until just combined—do not overmix.

Chop 2-3 apples (seeds removed) into pieces and fold into the batter without overmixing.

Pour batter into a parchment-lined 20 cm (8 inch) round cake pan.

Peel the remaining apple, halve it, quarter it, then slice thinly and arrange the slices in a circular pattern on top of the batter, slightly overlapping.

Sprinkle cinnamon sugar on top to help caramelize the apples and give them a golden color.

Bake at 180°C (350°F) for about 1 hour until a toothpick inserted in the center comes out mostly dry.

Let the cake cool for 10 minutes in the pan, then turn out onto a cooling rack and cool completely (about 1 hour or longer). The moist cake needs to cool completely for proper slicing.
