Preheat the oven to 350°F (180°C) with the rack positioned in the center. Prepare a 9-inch tube cake pan by brushing it thoroughly with butter, then dust with flour to coat completely, shaking off any excess.

Make the applesauce: peel and core 1 pound of Granny Smith apples and cut into small pieces. Place in a saucepan with 3/4 cup water, bring to a boil, then reduce to low heat and simmer for 20 minutes, stirring occasionally. Puree in a food processor and let cool completely.

In a medium mixing bowl, sift together the flour, salt, baking soda, baking powder, and all spices. Whisk to combine and set aside.

Using a stand mixer with paddle attachment (or hand mixer), beat together the softened butter, olive oil, and sugar on medium speed for 3 minutes until light and fluffy. Scrape down the sides and bottom of the bowl as needed.

Add the lemon zest and vanilla extract and mix well. Add the eggs one at a time on medium speed, beating well after each addition until fully incorporated.

On low speed, alternately add the flour mixture (in three additions) and the applesauce (in two additions), beginning and ending with the flour mixture. Scrape down the sides and bottom after each addition. Mix just until combined—do not overmix.

Pour the cake batter into the prepared pan and smooth the top with a spatula.

Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean. The exact time may vary depending on your oven.

Remove from oven when golden brown. Let rest in the pan for 8 to 10 minutes.
