Prepare the beef by removing silver skin, cutting into large pieces first, then slicing into ¼-inch thick slices.

Marinate the beef slices with baking soda, white pepper, dark soy sauce, Chinese cooking wine, cornstarch, and satay sauce. Coat with a drizzle of oil to prevent sticking, then set aside.

Prepare the Chinese broccoli by discarding the end and separating the stem from leaves. Cut the stem diagonally into bite-sized pieces.

Make the sauce by combining light soy sauce, oyster sauce, fish sauce, sugar, cornstarch, and water in a bowl. Mix well and set aside.

Heat the wok on high heat until smoking hot. Add oil and swirl to create a non-stick surface.

Spread the marinated beef slices in the wok and cook over high heat for a couple of minutes until nicely seared. Remove the beef but leave the oil in the wok.

Add the Chinese broccoli stem, minced garlic, and ginger to the wok and stir over medium heat for a couple of minutes. Add a splash of water if needed to create steam. Add the leaves and continue cooking until wilted.

Return the cooked beef to the wok. Pour in the sauce and stir until it thickens and coats the ingredients.
