   Prepare the red cabbage by cutting it into quarters, removing the stem, and then slicing it into very thin strips.

   Peel and dice the apple.

   Heat the lard in a pot, add the shredded red cabbage, and sauté for a few minutes while stirring constantly.

   Add the red wine vinegar, red wine, salt, black pepper, bay leaf, and cinnamon stick. Cover and simmer for about 30 minutes.

   After 30 minutes, add the sugar, black currant jelly, apple sauce (if using), and diced apples.

   Simmer for another 20 to 30 minutes. Taste and adjust seasoning with more sugar, jelly, salt, or pepper as desired.

   If there is excess liquid, optionally mix corn starch with cold water and stir in to thicken. If there is little liquid, thickening is not necessary.
