Ingredients

Apples (such as Chanteclerc or Belchard variety)~4est.
LemonTo prevent the apples from browning~½est.
Prunes macerated in ArmagnacAlternatively use quince marmalade or raspberry jam~½ cupest.
Honey~3 tbspest.
Cinnamon sticksSmall pieces~4est.
Armagnac or Calvados~3 tbspest.

WaterA tiny bit if necessary~¼ cupsest.
Raw sugarSprinkled on apples to create a brûlée effect~2 tbspest.

Select an appropriate apple variety such as Chanteclerc or Belchard and clean them thoroughly.

Core the apples and slice off the tops. Rub the cut surfaces with lemon to prevent browning.

Fill the hollowed cavities with macerated prunes in Armagnac, add honey, and insert small cinnamon sticks.

Sprinkle raw sugar over the apples, drizzle with Armagnac or Calvados, add butter, and a tiny bit of water if needed.

Place the apples in a preheated oven at 200°C (400°F) and bake for 60 minutes, basting the apples three times during cooking with the pan juices.

Bake until the apples are golden and beautifully caramelized. Remove and serve warm.
