Sauté the diced onion first until nicely caramelized — this is the flavor foundation.

Add the diced carrots and garlic, then add the ground beef; cook until the released moisture evaporates and the meat develops a nice browned crust (Maillard reaction).

Stir in the tomato paste and sauté briefly to sweeten it, then pour in the red wine and simmer until reduced by half.

Add the canned chopped tomatoes and a cup of stock, then stir in the flour and cook it briefly to remove any raw flour taste and thicken the sauce.

Spread a layer of the beef ragù in a buttered lasagna dish, sprinkle some cheese, then add a layer of the Mornay-coated ziti, and top with another layer of the ragù.

Top evenly with the seasoned fresh breadcrumbs, then bake in a preheated 350°F (175°C) oven for about 25-45 minutes until golden brown on top; if reheating from cold, bake until the internal temperature reaches 155°F (68°C).
