Beef Hamburger Recipe (Homemade Beef Patties and Easy Hamburger Sauce)

A classic homemade beef hamburger featuring a beef patty topped with thick tomato slices and plenty of lettuce, coated in a simple sauce made from ketchup and tonkatsu sauce, then dressed with cheese, pickles, and red onion on toasted hamburger buns.

Prepare the toppings: cut tomato into 1 cm thick slices, lightly rinse the thinly sliced red onion and drain in a mesh strainer, then pat dry with paper towels, and finely chop the pickle.

Make the burger patties: add milk to the panko and stir until moist, then add salt and pepper to the ground beef and squeeze together to distribute evenly.

Add the milk-soaked panko and finely chopped onion to the meat, continuing to squeeze and fold until well combined and the onion is thoroughly distributed throughout the mixture, not on the surface. Work quickly to prevent the heat from your hands from softening the fat.

Divide the mixture into two equal portions and roll each into a ball, coat your hands with vegetable oil, toss the ball from hand to hand to remove air pockets, then shape into a flat patty about 10 cm in diameter with a smooth surface.

Heat a frying pan with a thin coat of vegetable oil, place the patties on the pan and press lightly to attach them firmly, then cook on medium heat for about 2 minutes, occasionally rotating the pan for even browning.

Check the browning, and when evenly browned, gently flip the patties and cook for about 30 seconds, then add 1 tablespoon of water, cover immediately, and simmer on low heat for 3 more minutes.

The water should nearly evaporate and the patty should puff slightly in the center. Press the surface with your fingertips—if it feels firm and steady, it is cooked, or pierce with a skewer and check that only clear juices run out.

Turn off the heat and transfer the patties to a plate, wiping off excess oil from the pan if needed.

Make the sauce: combine ketchup, tonkatsu sauce, and water in the pan, heat and stir, then add butter and turn off heat once the butter melts.

Place the patties back in the pan and coat generously with the sauce.

Toast the hamburger buns: cut them in half horizontally and toast in the oven until lightly browned, then spread butter generously on each cut surface to prevent moisture absorption.

Spread whole grain mustard on the bottom bun, arrange the loose-leaf lettuce with the frills showing nicely, and place the chopped pickle on top.

Layer the red onion and tomato slice, then top with the sauced beef patty and a slice of cheddar cheese, cover with the top bun, and skewer with a bamboo stick to hold it together.
