Ingredients
Salmon (skin-on)
cut into large chunks
~500-600 g
est.
Tomato
core removed, cut into chunks
~3-4 medium
est.
Onion
sliced
~1 large
est.
Thai basil
added at the end
~½ cup
est.
Olive oil
~2-3 tbsp
est.
Black pepper
~¼ tsp
est.
Sea salt
~½ tsp
est.
Rice wine
~2 tbsp
est.
Water
~½ cup
est.
Brown rice
optional, for serving
~2 cups

Steps

Wash the tomato, remove the core, and cut into chunks.

Peel the onion, quarter it, then slice diagonally into pieces.

Cut the skin-on salmon into large chunks.

Heat the pan, add olive oil, and sauté the onion until fragrant.

Place the salmon in the pan skin-side down and sear; this helps prevent sticking and keeps the flesh intact.

Once the salmon is heated through and fragrant, flip it to cook the other side.

Push the salmon aside and add the tomato chunks, stirring them in the rendered salmon fat to help release the lycopene.

Season with black pepper and sea salt, then add rice wine and a bit of water.

Cover the pan and simmer over low heat for about 3-4 minutes until the salmon is fully cooked.

Before removing from heat, stir in the Thai basil to combine with the sauce, then turn off the heat.

Plate the dish, drizzle with the pan sauce, and serve with brown rice if desired.
