Heat peanut oil in a wok over medium-high heat and add the ground pork. Gently break up the meat for about 2 minutes. When it starts to stick, scrape it off the wok and continue cooking until the pork renders its fat. This whole process takes about 15–20 minutes until the meat begins to brown slightly.

Mix the minsi paste with 2 tablespoons of rendered lard until smooth, then add it to the pork. Fry for about 1 minute to combine.

Add the Guilin chili sauce and fry briefly to combine.

Add the hoisin sauce, tomato sauce, and sugar one by one.

Increase the heat to medium-high and fry the sauce in the lard for about 5 minutes to deepen the flavor.

Add the stock and bring to a boil. Continue cooking for about 5 more minutes while stirring frequently.

Season with salt, chicken bouillon, and MSG.

Make a slurry with cornstarch and water, then slowly add it to the sauce while stirring until it reaches the desired thickness. Turn off heat and transfer to a bowl.

Boil the wonton egg noodles until tender and place on a noodle plate.

Blanch a few lettuce pieces and arrange them neatly on the noodles.

Drizzle with sesame oil or lard, top with the meat sauce, and garnish with scallion. Mix well and serve.
