A celebratory Japanese-style fried rice topped with a rich dashi-based sauce featuring chicken and eight fresh vegetables. Simple to prepare and packed with layered flavors.
Cut the chicken thigh into thin strips and season lightly with brown sugar and salt.

Heat the seasoned chicken until partially cooked and set aside.

Prepare all vegetables by cutting the cabbage, enoki mushroom, onion, carrot, black fungus, and snap peas into bite-sized pieces.

Heat oil in a wok or skillet, crack the eggs into it, scramble until partially cooked, then add cold rice and toss well.

Transfer the fried rice to a serving bowl or plate.

In a separate pot, combine dashi, sake, mirin, sugar, soy sauce, oyster sauce, ginger paste, and sesame oil. Add the partially cooked chicken and prepared vegetables.

Mix cornstarch with water to make a slurry and stir it into the sauce to thicken it.

Pour the thickened sauce with all the ingredients over the fried rice to serve.
