Crack eggs into a bowl and whisk together with salt, black pepper, and about 2 tablespoons of water until well combined.

Pound the chicken breasts with a meat mallet until they are flattened to an even thickness.

Set up three shallow dishes with flour in the first, the whisked egg mixture in the second, and breadcrumbs mixed with fresh parsley in the third.

Coat each chicken breast first in flour, then dip in egg, and finally coat with the breadcrumb mixture. Place on a plate and repeat with all remaining chicken.

Heat oil in a large skillet, then add a small piece of butter to the hot oil.

Halve a garlic clove and add it to the oil, allowing it to infuse flavor. Once the garlic begins to dance and the oil is hot enough, carefully place the breaded chicken into the pan.

Reduce heat to medium and let the chicken cook. Place a small knob of butter on top and baste it over the entire surface of the chicken as it cooks.
