Mix flour with salt and black pepper. Season both sides of the chicken with salt and pepper.

Coat both sides of the chicken with the seasoned flour mixture, patting gently so it adheres evenly.

Heat oil and butter in a pan over medium heat. Once the butter melts, add the chicken and cook until both sides achieve a beautiful golden brown color.

Transfer the cooked chicken to a plate. In the same pan, add butter and flour to begin making the sauce.
