Bring a pot of water to boil for the noodles. Peel and thinly slice the garlic. Chop the green onions into bite-sized pieces. Cut the carrot into thin matchsticks. Shred the cabbage thinly. Remove the tough stems from the shiitake mushrooms and slice them.

Combine all the sauce ingredients in a bowl: soy sauce, dark soy sauce, black vinegar, plant-based oyster sauce, hoisin sauce, toasted sesame oil, and chili oil. Mix well.

When the water boils, add the frozen udon noodles and cook for 1 minute less than the package instructions. Drain and set aside.

Heat a sauté pan to medium heat. Add the avocado oil, then the shiitake mushrooms and garlic. Sauté for a couple of minutes. Add the green onions and sauté for another couple of minutes. Add the cabbage and carrots and sauté for 3–4 minutes. Add the bean sprouts, cooked noodles, and the sauce, stirring vigorously to coat the noodles evenly.

Plate the noodles and sprinkle with white sesame seeds before serving.
