Ingredients

Lucky Boat chow mein noodles~300 gest.
vegetable oilgenerous amount, as mushrooms absorb a lot of oil~3 tbspest.

MSG (monosodium glutamate)~¼ tspest.
mushrooms~250 gest.
dark soy sauce~1 tbspest.
light soy sauce~1 tbspest.
spring onions~2est.

Cook the Lucky Boat noodles in boiling water for approximately 4 minutes until tender.

Heat a generous amount of vegetable oil in a wok or large pan, using more than usual since mushrooms will absorb a lot of it.

Once the oil is hot, add onions along with a pinch of salt and MSG, stirring until the onions brown.

Add the mushrooms and stir to combine, observing how quickly they absorb the oil.

Add the cooked noodles and sprinkle with additional salt and MSG. Let the noodles sit without stirring for a moment to develop char, then flip. Repeat this process several times, alternating between letting it sit and stirring to build the signature takeaway flavor.

When the noodles smell toasty, add dark and light soy sauces. Continue cooking until all the soy liquid evaporates and caramelizes, allowing it to sit occasionally for optimal flavor development.

Add spring onions and cook for about 20 seconds to finish.
