Preheat oven to 350°F. Heat olive oil in a small skillet and add the finely diced onion. Cook over medium heat for about 10 minutes until softened but not caramelized.

While the onion is cooking, combine panko breadcrumbs with milk in a bowl and let the breadcrumbs absorb the liquid.

Once the onions are softened, add the minced garlic and turn off the heat. Let the residual warmth take the raw bite out of the garlic without fully cooking it. Allow the mixture to cool slightly.

Chop fresh parsley, using the tender center stems and avoiding the thick woody parts.

In a large bowl, combine the ground beef with the cooled onion and garlic mixture, milk-soaked breadcrumbs, eggs, garlic and herb seasoning, Worcestershire sauce, Parmesan cheese, parsley, salt, and pepper. Mix gently with your hands until just combined—do not overmix.

Line a baking sheet with parchment paper. Shape the meat mixture into a loaf form (roughly 9×5 inches) and place it on the prepared sheet.

Place the meatloaf in the preheated 350°F oven and bake for 40 minutes.

While the meatloaf is cooking, prepare the glaze by mixing ketchup, sweet chili sauce, yellow mustard, and brown sugar in a bowl.

After 40 minutes, generously spread the glaze over the top of the meatloaf, allowing it to drip down the sides.

Return the glazed meatloaf to the oven and continue baking for 20 minutes.

Remove the meatloaf from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute, preventing the meatloaf from drying out when cut.

If using a baking sheet, use paper towels to absorb any excess fat around the edges. Transfer the meatloaf to a serving platter and slice to serve.
