Bring a large pot of water to a boil.

Prepare the toppings: grate the daikon radish, thinly slice the green onion, and toast the nori on both sides until crispy.

Add 3 bundles of buckwheat noodles to the boiling water, stirring constantly to prevent clumping. Cook for about 6-7 minutes until tender.

Mix the wasabi powder with water to create a wasabi sauce.

Divide the soba sauce between two bowls (1/2 cup plus 1 tablespoon each), then add 1/2 cup of ice-cold water to each to dilute. Add ice cubes and sliced green onion to each bowl.

Drain the cooked noodles and rinse thoroughly with cold water until completely chilled. Add ice cubes to keep them crispy.

Place the chilled noodles on a large plate lined with a bamboo mat to allow excess water to drain. Crumble the toasted nori over the noodles and arrange the grated daikon alongside.

To eat, add a small amount of wasabi sauce to the dipping sauce, then dip portions of the noodles into the cold sauce. Adjust the wasabi amount to your preference.
