A popular Korean-style corn cheese side dish made with canned corn, melted cheese, and rice cake. The bubbling, melted cheese on top makes it an irresistible accompaniment, perfect with beer or soju.

Drain the canned corn and squeeze out excess water using a cloth filter or cotton cloth. You can also use your bare hands.

Mince the onion, red bell pepper, and green bell pepper. Add a pinch of salt and let sit for about 5 minutes, then squeeze out the excess water from the vegetables.

Heat a cast iron pan over medium-high heat, add butter and the drained corn, and stir-fry for 2-3 minutes.

Add the squeezed vegetables and stir until well combined. Let cool slightly.

Mix in the mayonnaise and sugar into the cooled corn mixture.

Transfer the mixture to the heated cast iron pan, add the thawed rice cake and mozzarella cheese.

Reduce heat to low and allow the cheese to melt. Use the broil function or continue cooking on the stovetop until the cheese is fully melted and bubbling. Watch carefully until the cheese is slightly browned.

Once the cheese is melted and bubbling, serve immediately. Best enjoyed with beer or soju.
