Heat 3g of oil in a pan over medium heat. In a separate pot, bring salted water to a boil, add the noodles, and cook for 1 minute. Shake gently with tongs, then drain in a colander, reserving some noodle water.

Mix peanut butter, soy sauce, rice vinegar, lime juice, and honey in a glass. Set aside to blend when heated.

Slice the chicken breast into strips. Dice the onion and bell pepper into bite-size pieces. Optionally chop the chili.

Stir-fry the vegetables in the preheated oil with a pinch of salt for about 3 minutes until the onions become translucent and start to caramelize.

Push vegetables to the side of the pan, add another 3g of oil, and add the chicken. Separate the pieces well. Season with salt, black pepper, garlic powder, and cumin (optional). Sear for 1 minute until the bottom browns, flip, and sear another minute.

Give everything a good stir, add the drained noodles with a splash of noodle water, stir quickly, then add the peanut sauce and turn off the heat. Continue stirring for about 1 minute until the peanut butter melts completely and coats the noodles.
