Bring a pot of water to boil for the pasta. Finely chop the onion and garlic into small pieces.

Heat a sauté pan over medium heat, add avocado oil, then the onions and garlic. Sauté for 3–4 minutes until softened and fragrant. Season with salt and pepper to taste, add the cashews and stir well. Pour in 2 cups of water, stir, and bring to a boil.

Cook the pasta according to package directions (about 9 minutes). Carefully transfer the contents from the sauté pan into a blender. Optionally add about a quarter cup of hemp hearts and blend on high speed until completely smooth and liquefied.

Return the sauté pan to medium heat and pour in half of the white sauce. When the pasta is cooked, transfer it to the sauce. Grate in about a quarter cup of plant-based parmesan and stir well to incorporate. Add about a quarter cup of the pasta cooking water to thin the sauce, turn off the heat, and stir again.

Plate the pasta and garnish with additional grated plant-based parmesan, freshly chopped parsley, and fresh cracked pepper to taste.
