Pat the chicken wings completely dry with kitchen paper, removing all surface moisture. Place paper towels on a large plate, arrange wings on top, and refrigerate uncovered for 2 to 24 hours, ideally overnight.

Preheat the oven to 220°C (430°F or gas mark 8). Line a large baking tray with foil and place a grill rack on top to allow good air circulation around the wings.

Place the dried wings in a large shallow mixing bowl. Add the baking powder and 1/4 teaspoon of salt. Mix by hand first, then gently toss the wings in the bowl until evenly coated with the baking powder and salt mixture.

Arrange the coated wings on the baking rack skin side up, leaving space between each wing.

Place the tray in the preheated 220°C oven and bake for 40 minutes. Halfway through (around 20 minutes), carefully remove the tray and flip the wings over to ensure even cooking on both sides.

While the wings are cooking, prepare the buffalo sauce: melt butter in a bowl (microwave for about 30 seconds). Add paprika, garlic powder, onion powder, and 1/2 teaspoon of chili or cayenne pepper powder. Mix well, then add lemon or lime juice and salt to taste. Add 1 teaspoon honey if you prefer it sweeter.

When the wings finish cooking, turn off the oven and crack the door open about an inch. Leave the wings inside for about 5 minutes in the warm oven. This professional technique ensures maximum crispness while keeping the meat moist.

Carefully remove the wings from the oven and place them on a wire rack to cool briefly. Have a clean bowl ready and transfer all the wings into it immediately.

Microwave the buffalo sauce for about 15 seconds to warm it up. Pour the sauce into the bowl with the wings, adding as much or as little as you prefer. Toss the wings continuously until all are completely coated with the sauce.

Transfer the sauced wings to a serving plate. Finish with a sprinkle of chopped fresh coriander or flat leaf parsley for garnish and added flavor.
