Prepare the dipping sauce by combining oyster sauce, ketchup, vinegar, sugar, and minced garlic in a small bowl. Stir well and adjust seasonings to taste—add more vinegar for tanginess, sugar for sweetness, or chili oil for heat as desired.

Slice one green onion and measure out about 2 tablespoons of the chopped pieces. Use a minimal amount to prevent the shrimp filling from becoming too watery.

Pat 250 g of peeled raw shrimp dry and finely mince them with a knife. Always use raw shrimp; cooked shrimp will become tough during frying.

Place the minced shrimp in a mixing bowl and add the green onion, potato starch, egg white, chicken bouillon powder, black pepper, and melted butter. Stir vigorously in one direction for 2–3 minutes until the mixture becomes sticky and holds together well. Add more potato starch if it's still too watery.

Take 4 slices of white bread, remove the crusts, and cut each slice into quarters. Adjust the size to your preference—you can make smaller pieces or keep them larger.

Assemble the toast by spooning shrimp filling onto a bread piece and topping it with another slice. Press gently in the center to help the two pieces stick together. If filling spills out from the sides, simply tuck it back in with your finger or a spoon.

Fill a pot with oil and heat it to 160°C (320°F).

Carefully add the shrimp toast pieces one by one to the hot oil and fry for about 6 minutes until the outside is golden brown and crispy. Alternatively, use shallow frying or an air fryer with oil spray.

Remove the fried shrimp toast and let it rest for about 2 minutes on a wire rack or paper towels to drain excess oil and prevent greasiness.
