Clean and pat dry the pork belly thoroughly.

Mix together salt, garlic salt, onion powder, Italian seasoning, black pepper, cumin powder, smoked chili powder, five-spice powder, and sugar. Blend until evenly combined.

Make shallow cuts about 1 to 1.5 finger-widths apart into the meat portion, cutting to about half the meat thickness. This helps the seasonings penetrate.

Rub the spice mixture evenly over the meat, making sure to fill all cuts and crevices thoroughly. Keep the spice mixture away from the pork skin.

Wrap the pork belly loosely in aluminum foil to preserve the juices and moisture during cooking.

Wipe the pork skin clean with paper towels, removing any spice residue to keep it pure.

Brush white vinegar evenly over the pork skin, then sprinkle salt over it. The vinegar removes excess moisture from the skin while the salt adds flavor.
