A nourishing and protein-rich paratha filled with spiced whole green gram (moong), wrapped in whole wheat dough and pan-fried until crispy and golden. This twist on the classic Indian flatbread combines street-style flavour with wholesome comfort.

Place the boiled green gram in a bowl and mash it lightly. Add turmeric powder, red chilli powder, salt, chopped green chillies, ginger, garam masala powder, dried mango powder, and coriander leaves. Mix well to form the filling.

Divide the dough into equal portions and roll each into a ball. Make an indentation in the centre of each ball, fill it with the green gram mixture, then gather and seal the edges securely.

Dust the work surface with whole wheat flour and roll out the stuffed dough into a thick circular disk.

Heat a tawa (griddle) over medium heat. Place the prepared paratha on it and cook for 2–3 minutes, flip it over, drizzle with ghee, and cook for another 2–3 minutes.

Flip once more, drizzle with additional ghee, and cook for about 1 minute more until both sides are golden and crispy.
