Thick chewy udon noodles soaked in a rich, fragrant curry sauce. This Japanese curry udon is a simple and quick noodle soup dish made with a dashi-based curry broth, your choice of protein, and vegetables.

Ingredients

thinly sliced pork loin6 oz
neutral-flavored oil1 tbsp
sake1 tbsp
dashi3 cups
Japanese curry rouxroughly 2 oz or 50 g total2 cube
soy sauce2 tsp
udon noodles6.3 oz/180 g dry udon noodles or 1.1 lb/500 g frozen/boiled udon noodles2 servings
green onions/scallionsfinely chopped2

Slice the onion thinly.

Slice the green onions finely.

Heat 1 tbsp of oil in a medium pot over medium heat. Add the sliced onion and sauté for 2-3 minutes until softened.

Add the thinly sliced pork and cook until almost no longer pink.

Add 1 tbsp sake.

Add 3 cups dashi and cover with a lid. Reduce heat to medium-low and cook for 5 minutes.

Meanwhile, start boiling a large pot of water for the udon noodles.

Skim off the scum and fat from the broth and continue cooking.

After 5 minutes, turn off the heat. Place the curry roux cubes in a ladle and dissolve them completely one at a time with chopsticks or a spoon before releasing into the soup.

Return to medium heat, add 2 tsp soy sauce, and mix well.

Turn off the heat and cover with the lid to keep the curry warm.

When the water comes to a boil, cook the udon noodles according to the package instructions.

Drain the noodles and divide them into two bowls.

Pour the curry broth over the udon noodles, top with green onions, and serve immediately.
