   Grate the onion and squeeze out excess moisture, then set aside.

   In a food processor, combine the chicken mince with ginger-garlic paste, green chillies, roasted cumin seeds, black peppercorns, garam masala, cardamom powder, coriander, mint, fried onions, salt, and grated onion. Process until finely combined.

   Add butter, egg white, and breadcrumbs, then continue grinding until well incorporated.

   Transfer the mixture into a piping bag.

   Grease a nonstick grill pan with melted butter and pipe the chicken mixture into long cylindrical shapes.

   Cook over medium heat for 2–3 minutes, then flip. Drizzle with more melted butter and cook for another 3–4 minutes until cooked through.

   Transfer to a serving plate, sprinkle with chaat masala, and serve hot with salad and green chutney.
