Durian Porridge with Steamed Glutinous Rice

   Measure about 2 cups of glutinous rice and rinse quickly with water to remove dust, then drain and place in a steaming pan.

   Add a pandan leaf to the pan (tearing or knotting it either way is fine). Pour in 1 tablespoon of coconut milk and 1 tablespoon of cooking oil, then add water to reach half a finger's height above the rice.

   Steam the glutinous rice in a steamer for 20-30 minutes until no uncooked white grains are visible.

   Once cooked, remove the pan and while still hot, gently fluff the rice with a fork or spoon to release steam evenly, making it fluffy, dry and glossy without lumps.

   Prepare the sago by rinsing quickly with water and draining, then place in a pot and cover completely with water.

   Cook the sago over low heat until swollen and transparent, with just a few white specks if any. Once done, sieve and rinse again with water to remove excess starch.
