Garlic clovehalved, for rubbing on toasted bread (optional)1
Steps
1
Heat olive oil with minced garlic in a small skillet over medium-low heat for 2-3 minutes until fragrant, being careful not to burn. Transfer to a bowl to cool.
2
Remove the tops from the tomatoes and dice them into uniform small pieces.
3
Add the diced tomatoes to the cooled garlic-infused oil.
4
Slice the fresh basil thinly and add it to the tomato mixture.
5
Pour in balsamic vinegar, add salt and black pepper, and mix well to combine all ingredients evenly.
6
Refrigerate the tomato mixture for at least 30 minutes up to 4 hours to allow flavors to meld.
7
Preheat the oven to 400°F. Slice the baguette diagonally into approximately 1/2-inch thick pieces.
8
Arrange bread slices on a baking sheet and brush both sides generously with olive oil.
9
Bake the bread for 12 minutes, flipping halfway through at the 6-minute mark, until golden and crispy.
10
Remove bread from the oven, let cool slightly, and rub with the halved garlic clove for extra flavor (optional).
11
Top each toasted bread slice with about 1 tablespoon of the tomato mixture and serve immediately.
