Combine onion, garlic, fresh parsley, dill, dried oregano, dried basil, paprika, Dijon mustard, lemon juice and zest in a food processor.

Coat each chicken thigh thoroughly with the marinade, using gloves to ensure even coverage and retain all the flavorful mixture.
