Ciabatta rolls are super simple to make and incredibly impressive. This recipe uses just basic pantry ingredients and simple equipment to create beautifully textured rolls with wonderful open crumb structure.

Combine all purpose flour, instant yeast, and sugar in a large bowl. Mix together with a dough whisk or wooden spoon.

Pour in warm water and use the whisk to bring the ingredients together into a shaggy dough. Sprinkle salt over the mixture and use your hands to gently knead until the flour is incorporated and the ingredients are combined.

Cover the bowl with a food cover or damp cloth and let rest for 30 minutes before the first stretch and fold.

After 30 minutes, perform the first stretch and fold: dampen your fingertips, gently grab the dough from the sides of the bowl, and fold it toward the center with a light pressing motion. Rotate the bowl and repeat until all sides are stretched and folded. Cover and let rest another 30 minutes.

Perform the second stretch and fold using the same technique. Alternatively, you can do a third stretch and fold session, or simply let the dough rise until it roughly doubles in volume (typically 1-2 hours depending on room temperature).

Add the olive oil during the final stretch and fold session, gently incorporating it throughout the dough. Let the dough continue to rise until roughly doubled in volume.

Preheat the oven to 425°F. Place a 9x13 inch baking dish on the lowest oven rack (to be used for steam). Line a baking sheet with parchment paper and lightly dust with flour.

Gently transfer the risen dough to the prepared baking sheet. Using your fingertips, lightly stretch the dough into a roughly square shape without deflating it. Aim for even thickness throughout.

Use a bench scraper to cut the dough into rolls with clean, straight cuts. Gently place the cut rolls on the baking sheet, folding edges underneath if needed to form nice square shapes.

Pour 2 cups of water into the 9x13 inch baking dish on the bottom oven rack. Place the baking sheet with rolls on the middle rack and bake for 20 minutes with the steam-creating water pan in place.

After 20 minutes, remove the water pan from the oven. Continue baking the rolls for an additional 15-18 minutes until they turn a beautiful golden brown.

Remove the ciabatta rolls from the oven. Although they smell amazing fresh from the oven, allow them to cool completely before cutting to allow the interior crumb structure to set properly.
