Prepare the flavor base by chopping the onion, celery, and carrots into small pieces. Heat the olive oil in a large pot or Dutch oven, ensuring it doesn't smoke.

Add the prepared vegetables to the hot oil and sauté for about 4 minutes until they begin to soften without burning. Then add the garlic, dried rosemary, and bay leaves, stirring for another minute.

Pour the vegetable stock into the pot. Rinse the dried lentils first to remove dirt and check for stones, then add them to the broth.

Add the diced potatoes and crushed tomatoes (rinse the can with a little water). Season with salt and black pepper, and stir well.

Cover the pot with a lid and bring to a boil. Then crack the top open and simmer for 30 to 45 minutes until the lentils and potatoes are tender.

Add the spinach to the soup (chop larger leaves if necessary). Let it simmer for about a minute until it wilts.

Add the balsamic vinegar to enhance umami, then give it a final stir. Adjust the consistency to your preference by adding more broth for a thinner soup or simmering longer for a thicker one. Taste and adjust the salt as needed.

Serve the soup in bowls. Accompany with toasted bread rubbed with garlic, drizzled with extra virgin olive oil, and topped with freshly cracked pepper.
