1
In a bowl, combine 200 g mayonnaise, 1 tbsp hot sauce, 1 tsp chilli powder, 1/2 tsp salt, and 1/2 tsp pepper. Mix well until fully combined.
2
Chop 6 boiled eggs into rough small pieces, adjusting the size according to preference for chunkier or finer pieces.
3
Transfer chopped eggs to a bowl, add the finely chopped onion, spicy mayonnaise mixture, and spring onion greens. Mix well until everything is evenly combined.
4
Heat oil in a pan until hot. Gently place thick bread slices into the pan and fry both sides until golden brown, maintaining medium-low heat to prevent burning.
5
Place the fried bread on a plate and let it cool completely.
6
Using a knife or scissors, carefully make a cut or slit on one side of the bread, then gently separate the layers in the center to create a pocket without tearing the bread.
7
Spoon several spoonfuls of egg salad mixture into the bread pocket.
8
Garnish with chopped spring onion greens or chives and serve.
