Sauté the chopped shallots and diced mushrooms in olive oil with a pinch of salt to help draw out moisture.

Add chopped garlic and your favorite fresh herb (sage, thyme, or tarragon), cook until fragrant, then stir in spinach and a few optional sun-dried tomatoes. Season with salt and pepper to make the vegetable filling base.

In another pan, sauté shallots in butter until lightly golden, add garlic and herbs, cook until fragrant, then pour in Marsala wine (a fortified wine that doesn't need reducing) and beef stock. Let it simmer to reduce.

Combine the sautéed vegetable filling (mushrooms, shallots, garlic, herbs, spinach) into the sauce pot and reduce until most of the liquid has evaporated.

Mix the drained ricotta, goat cheese, mascarpone (or cream cheese), and rind-removed Brie together, season with salt and pepper to make the cheese filling, then refrigerate until firmer and easier to handle.

Combine the chilled vegetable mixture with the cheese mixture to create the final ravioli filling.

Dust the work surface with semolina flour, lay out the thinly rolled pasta sheet, and mark small circles to indicate the inner and outer boundaries for filling placement.

Pipe the cheese filling using a pastry bag into the center of the marked inner circle on the pasta sheet, staying within the marked boundary.

Carefully snip open the top of a quail egg shell with scissors or a serrated knife, then place the yolk (or whole egg) into a small well in the center of the filling.

Cover with a second pasta sheet, gently press it to hug the filling, and push out any trapped air from around the mound.

Press and seal the outer border firmly, then use a larger round cutter centered on the mark and press down firmly to cut out a flower-shaped ravioli.

Cook the assembled raviolis in salted water at a gentle simmer (not a hard boil), keeping them from touching each other.

Strain the sauce to remove the solids for a more elegant, smooth texture, then off the heat, stir in butter to enrich it without letting it separate from too much heat.

Ladle a layer of sauce onto the plate, fish out the cooked raviolis, blot them on a towel, then arrange them on the sauce.

Finish with a sprinkle of pine nuts and Parmesan, then serve — when cut open, the egg yolk will run out and mix beautifully with the sauce.
