Add water to powdered gelatin and mix well until thickened. Let soften while you prepare the other ingredients.

Divide the frozen strawberries into two portions (2/3 and 1/3). Place the larger portion in a microwave-safe bowl, add lemon juice, cover with plastic wrap, and microwave at 600W for 2 and a half minutes. Cut the remaining smaller portion into bite-sized pieces.
3
Mash the heated strawberries using a potato masher or fork until they become a smooth puree.
4
Add honey to the mashed strawberries and mix well. Add the softened gelatin and stir until completely dissolved.

Using a hand mixer, whip the mixture for 7 to 10 minutes until it becomes pale, fluffy, and forms stiff peaks. Cover loosely with plastic wrap during whipping to prevent splashing, removing it when the texture becomes less runny.

Quickly fold in the cut strawberry pieces.
7
Pour the marshmallow mixture into a container lined with parchment paper. Gently tap the container from a low height to level the surface.
