Prepare all vegetables: wash and peel the cucumber, wash the yellow/orange bell pepper and remove seeds and white membranes, wash the sweet pepper and remove seeds.

Cut the cucumber, yellow/orange bell pepper, sweet pepper, garlic clove, and fresh tomatoes into chunks and place in the blender.

Add the soaked and squeezed-out bread, canned tomatoes, sherry vinegar, salt, black pepper, and fresh basil to the blender.

Blend everything on high speed (smoothie setting) until completely smooth and fine.

While the blender is running, slowly drizzle in the extra virgin olive oil to achieve a creamy consistency.

Strain the soup through a fine mesh sieve to remove any bits and achieve a silky-smooth texture.

Stir gently once more and refrigerate for at least 2-3 hours, preferably overnight, until thoroughly chilled.

Chill the serving bowls beforehand. Pour the soup into the chilled bowls and top with crispy croutons, diced avocado, and a drizzle of good olive oil.
