A special golden beef fried rice recipe created to celebrate Lunar New Year. The dish combines Korean-style egg yolk coating to achieve the golden color with Chinese velveting technique for the beef, creating a luxurious and symbolically auspicious dish representing prosperity and good fortune.

Salt1/6 tsp
MSG (Monosodium glutamate)1/6 tsp
Bicarbonate of soda1/6 tsp
Potato starch slurry1 tsp
Garlic powder½ tsp
White pepper¼ tsp
Light soy sauce1 tsp
Dark soy sauce2 tsp
Chinese rice wine1 tsp
Overnight riceCook rice, cool for 60 minutes, then refrigerate overnight before use

Slice the beef at a 45-degree angle to cut across the grain and achieve even, tender slices.

Prepare the beef marinade by combining salt, MSG, bicarbonate of soda, potato starch slurry, garlic powder, white pepper, dark soy sauce, light soy sauce, and rice wine. Mix the marinated beef thoroughly.

Refrigerate the marinated beef for approximately 20 minutes or longer to develop flavour.

Prepare the rice mixture by combining overnight cooled rice with salt, MSG, and turmeric to create the golden colour.

Prepare an egg mixture by beating 1 whole egg together with the 2 reserved egg whites, a pinch of salt, and a pinch of MSG.

Heat vegetable oil in a wok, then pour the egg mixture directly into the hot oil and stir to create wok flavour, browning the egg.

Heat oil in the wok and add the velveted beef, cooking briefly for about 40 seconds until just browned. Remove and set aside.

Heat oil and fry the chopped onion with a pinch of salt and MSG until softened.

Add the golden rice to the wok and press it down with the spatula to allow it to make contact with the hot surface for charring. Season with salt, MSG, and a small amount of light soy sauce. Keep stirring to prevent lumps from forming.

Once the rice is piping hot, add the spring onions, cooked egg, and cooked beef.

Fry everything together for about 30 seconds to ensure all ingredients are heated through while keeping the spring onions fresh and crisp. Serve immediately.
