Preheat oven to 375°F. Prepare a large baking sheet and spread the diced Yukon gold potatoes on it. Layer the sliced red onion over the potatoes. Season generously with kosher salt and black pepper.

In a large bowl, soak the bread slice in water and squeeze out excess moisture. Add the lean ground beef, grated yellow onion, minced garlic, egg, and chopped fresh parsley and mint.

Add dried oregano, ground coriander, ground cumin, ground nutmeg, kosher salt, and black pepper. Drizzle in a small amount of extra virgin olive oil to enhance moisture and flavor.

Wearing gloves, mix all ingredients with your hands until completely combined and well incorporated. Ensure everything is evenly seasoned. Form the mixture into 15 to 20 meatballs.

Nestle the meatballs onto the baking sheet with the potatoes and onions.

Prepare the ladolemono sauce: In a bowl, combine fresh lemon juice, fresh garlic, kosher salt, black pepper, and dried oregano. Gradually whisk in extra virgin olive oil until the sauce becomes smooth and velvety.

Pour the ladolemono sauce over the meatballs and potatoes. Cover the baking sheet with foil and bake in the preheated oven for 30 to 40 minutes until the meatballs are cooked through and potatoes are tender.

Remove the foil and return the baking sheet to the oven for an additional 10 to 15 minutes to brown the meatballs, allow the potatoes to crisp up slightly, and finish cooking.
