Finely mince the parsley by holding the knife upright and fanning it back and forth until very fine, keeping some tender stems for flavor. Place in a large bowl.

Add the 4 minced garlic cloves to the bowl.

Strip the fresh thyme leaves from the stems by holding and pulling gently, gathering about 1 teaspoon, then add to the bowl.

Add 2 teaspoons of dried oregano (Greek oregano is preferred) to the bowl.

Zest a fresh lemon by rubbing it on the grater, then juice it by cupping your hand to catch seeds, and add both zest and juice to the bowl.

Pour in 1/3 cup of extra virgin olive oil.

Add about 1 teaspoon of sweet Spanish paprika.

Add a generous pinch of kosher salt and black pepper. Whisk everything together thoroughly until well combined.

If using chicken breasts, cut them horizontally in half to create even thickness. Add the chicken to the marinade, making sure each piece is completely coated and submerged.

Cover and refrigerate. For chicken breasts, marinate for 1 to 2 hours; other cuts can marinate from 30 minutes up to 8 hours. Do not marinate chicken breasts overnight, as the citrus acid will alter the texture and may partially cook the meat.

Preheat the grill to medium heat. Just before grilling, give the chicken a gentle shake to release excess marinade back into the bowl. Grill covered for about 4 minutes until nearly cooked through on one side.

Flip the chicken and grill the other side for 30 seconds to 1 minute until cooked through.

Immediately tent the cooked chicken with foil and let it rest for a couple of minutes. Remove from heat at 150-155°F internal temperature, then tent with foil to finish cooking to a safe 165°F, which keeps the meat juicy.

Serve immediately, optionally alongside Greek yogurt sauce or other accompaniments, and enjoy the juicy, flavorful grilled chicken.
