Cut the chicken thighs lengthwise in half, then turn 90 degrees and cut into roughly 1-inch cubes for even grilling.

Place the diced chicken in a bowl and add olive oil, salt, minced garlic, oregano, black pepper, Dijon mustard, lemon zest, and lemon juice. Toss until all the meat is well coated, then refrigerate for at least 30 minutes or up to 24 hours.

Grill the chicken for 15-20 minutes, turning occasionally until all sides are well charred. Grill pitas for about 2 minutes per side until they have nice grill marks.

Remove the chicken from the skewers and chop into smaller pieces, roughly half an inch in size. Place about 8 oz of chicken on a warm pita bread.

Top with about 3 generous spoonfuls of tzatziki sauce, followed by 2 big dollops of tomato-onion relish, and finish with a handful of sliced pepperoncini peppers.
