Greek Salmon Recipe | How to Cook Salmon (Mediterranean Diet Recipe)
Green onionstrimmed and chopped (white and green parts)2
Cherry tomatoes1 cup
Steps
1
Prepare the sauce by combining lemon zest, lemon juice, minced garlic, oregano, fresh dill, and olive oil in a bowl.
2
Pat the salmon fillet dry with a paper towel and lightly coat a baking dish or cast iron skillet with olive oil.
3
Place the salmon in the prepared baking dish and season with kosher salt and black pepper.
4
Trim and chop the green onions, and halve or keep the cherry tomatoes whole as desired.
5
Pour some of the lemon-dill sauce directly over the salmon, then add the cherry tomatoes and chopped green onions on top.
6
Pour the remaining sauce over the entire dish.
7
Bake in a 400°F oven for 10 to 15 minutes until the salmon is cooked through. Test doneness by flaking gently with a fork—it should flake easily, feel firm but remain moist. Internal temperature should reach 140–145°F.
8
Remove from the oven, drizzle with additional sauce, and finish with a sprinkle of lemon zest before serving.
