Pulse onion, garlic, parsley, dill, and mint in a food processor until finely chopped.

Add the chopped vegetable and herb mixture to ground beef along with salt, black pepper, and dried oregano. Mix thoroughly until the seasonings are evenly distributed.

Shape the meat mixture into balls, then flatten each into a patty.

Place the patties on a plate and refrigerate for about 10 minutes.

For the yogurt sauce: grate the cucumber along the sides to avoid the seedy core, then squeeze out excess liquid.

Add the grated cucumber, additional garlic, and fresh herbs to the food processor and chop finely.

Add half to one whole lemon (depending on desired lemon intensity), Greek yogurt, and 1 tablespoon extra virgin olive oil. Mix until fully combined.
