1
Begin the meat sauce by finely mincing an onion and sautéing it in olive oil in a saucepan.
2
Add grated garlic, ground beef, salt, pepper, bay leaves, ground cinnamon, and canned crushed tomatoes (or tomato sauce) to the pan. Finish with freshly chopped parsley.
3
Slice potatoes and spread them on a baking tray. Drizzle with olive oil and season with salt, pepper, and oregano. Bake in a 400°F oven until golden.
4
Slice the eggplant and fry the slices on both sides for about 2 to 3 minutes each.
5
Layer the ingredients in a 9x13 inch baking pan: start with potatoes sprinkled with Parmesan cheese, then add eggplant slices with more cheese, followed by the meat sauce. Add another layer of eggplant and finish with more potatoes on top.
6
Prepare the béchamel sauce: in a saucepan, combine all-purpose flour and light olive oil over heat, then gradually whisk in 5 to 6 cups of whole milk along with salt, black pepper, and ground nutmeg.
7
Turn off the heat and slowly temper the eggs by pouring some of the hot cream mixture into them, then add the tempered eggs back into the saucepan. Stir in a handful of cheese.
8
Pour the béchamel sauce over the layered vegetable and meat mixture. Bake in a 400°F oven on the center rack for 45 to 60 minutes until golden brown. Let it rest briefly, slice, and serve.
