Cut the phyllo sheets and arrange on a baking tray. Dry in a 100°C oven for 10 minutes until completely brittle and crispy.

In a bowl, combine 4 eggs, a pinch of salt, and 120 g sugar. Add 200 g strained yogurt and 150 ml vegetable oil.

Whisk the mixture until smooth and creamy. Add the zest from 2-3 fresh oranges and blend well.

Confirm the dried phyllo is completely brittle. Add 20 g baking powder to the egg mixture.

Using two forks, gently fold the phyllo into the batter piece by piece, coating each piece evenly to maintain a light, airy texture.

Oil a 20×30 cm baking pan, coating the sides thoroughly. Pour the mixture into the pan and spread evenly.

Bake at 180°C for about 40 minutes until a toothpick inserted in the center comes out clean.

Prepare the syrup: Cut the peel from 2 oranges into strips. Combine 400 ml fresh orange juice, 100 ml water, and 400 g brown sugar. Add the orange peel.

Bring the syrup to a boil, then simmer for exactly 5 minutes to achieve the perfect consistency.

Remove the hot cake from the oven and prick the entire surface with a toothpick to help the syrup soak deep into every layer.

Pour the warm syrup over the hot cake. Allow to cool, then refrigerate for at least 2 hours.
