Boil the two whole oranges in water for about 1 hour to remove the bitterness from the peel.

Meanwhile, spread the filo pastry sheets out on a board and let them dehydrate for about 1 hour until they turn crisp and sponge-like, ready to soak up the orange custard mixture.

Once the oranges are boiled, discard the bitter cooking water and set the oranges aside. In a pot, combine water, sugar, and orange juice to make the syrup.

Trim off the bitter tips of the boiled oranges, cut them in half, and carefully remove all the seeds, keeping only the pulp.

Squeeze the orange pulp to release the concentrated juice directly into the mixer (discarding any bitter liquid), and repeat with the second orange.

Add sugar to the mixer with the oranges and beat well until it turns into an orange marmalade-like mixture.

Transfer the orange marmalade to a large bowl (if your mixer isn't big enough) and add the seed oil, milk, three eggs, orange zest, baking powder, baking soda, and vanilla extract. Mix everything together until it resembles an orange custard.

Divide the dehydrated filo into about 10 portions. Add them gradually to the custard mixture, stirring gently and letting each batch rest briefly to absorb the liquid before adding the next, so the filo pieces don't clump together. Repeat until all filo is incorporated.

Grease a 25x32 cm baking pan with sunflower oil and dust with flour, then pour in the batter.

Bake in a preheated oven at 160°C (fan) for about 40 to 50 minutes.

As soon as the pie comes out hot, pour the cooled orange syrup over it immediately. Let it rest for about an hour so the syrup is fully absorbed.

Cut into pieces and serve, optionally topped with a scoop of vanilla ice cream.
