Finely chop the onion and cook it in a pot with the olive oil and a pinch of salt over medium heat until soft and golden, about 8-10 minutes.

Add the grated garlic and cook for a few seconds until fragrant.

Add the ground beef, breaking it up as it cooks until no longer pink. Season with salt and freshly cracked black pepper, and add crushed red pepper flakes if desired.

Add the canned tomatoes, paprika, and cinnamon, along with a splash of water (used to rinse out the can). Cook over medium-high heat for about 20-25 minutes until the sauce thickens and the meat is fully cooked.

Taste and adjust seasoning with salt and pepper if needed, then stir in the oregano and chopped fresh parsley. Set the sauce aside.

In a separate pot of salted boiling water, cook the spaghetti until al dente (about 9-10 minutes), reserving some of the pasta water before draining.

Drain the pasta, then drizzle with olive oil and toss with a little dried oregano.

Stir some of the reserved pasta water into the meat sauce to thin it to your desired consistency.

Plate a generous mound of pasta, top with plenty of meat sauce and grated cheese, garnish with fresh parsley if desired, and serve.
