Add the quartered yellow onion and garlic cloves to a food processor fitted with an S-blade.

Add two teaspoons sumac, one teaspoon Aleppo pepper, one teaspoon ground coriander, and half a teaspoon ground allspice.

Add the juice of one lemon and extra virgin olive oil, then process until combined to form a chunky onion marinade with all the spices.

Pat the boneless skinless chicken thighs dry and season well with kosher salt and black pepper.

Place the seasoned chicken in a bag and pour the marinade over it. Seal the bag and massage the chicken thoroughly to coat evenly with the marinade. Refrigerate for at least a couple of hours, turning occasionally.

Heat the grill to medium-high. Place the lemon halves flesh-side down on the grill over direct heat and grill until char marks appear.

Brush pita bread on both sides with extra virgin olive oil and grill for about 40 seconds on each side until warm and lightly charred.

Shake off excess marinade from the chicken and arrange in a single layer on the grill. Cover and grill over medium-high heat for about 5 minutes, then flip and grill another 5 minutes until cooked through.

Remove the chicken from the grill and let it rest for about 5 minutes. Arrange the chicken, grilled lemons, grilled pita, pickled red onions, and tzatziki sauce on a large serving platter family-style, and garnish with additional sumac.
