Clean the dried anchovies by removing the guts and any dark bits from the heads, place them in a soup bag, and add about 1.5 liters of water to make the stock.

Cut the napa cabbage into small pieces, rub lightly with salt, rinse, and squeeze out excess water.

Add the doenjang paste to the stock (mash it in directly for a rich flavor), then add the cabbage, a little flour for thickness, and minced garlic. Simmer gently for about 2 minutes, then lower the heat further so the anchovy stock releases its flavor without turning bitter from overcooking.

Cut the chives into pieces and mix with flour, salt, and water to form a batter; optionally add onion, carrot, or seafood like clam meat. Pour into a hot oiled pan and fry until golden on both sides to make the chive pancake.

Slice the scallions into thin strips, rinse in cold water to remove the sharp bite and sliminess, drain, then toss with toasted sesame seeds, sesame oil, and a little apple cider vinegar to make a slightly sweet, tangy, and spicy scallion salad.

Slice a clove of garlic and mix it with doenjang, gochujang, plum extract syrup, sesame oil, and sesame seeds to create the ssamjang dipping sauce.

Cut the onion into bite-sized pieces and prepare it alongside the Hanwoo beef, seasoning simply with just salt and sesame oil to preserve the beef's natural rich flavor.

Heat a pan with a little sesame oil, then grill the Hanwoo beef and onions together until fragrant and cooked to the desired doneness.

Plate the grilled Hanwoo beef alongside the doenjang soup, chive pancake, scallion salad, ssamjang, perilla leaves, green chilies, and kimchi, and serve together with steamed rice.
