How to Make Authentic Chinese Char Siu Sauce (Better Than Store-Bought!)
Fermented bean curdCan be substituted with 1.5 tbsp miso paste; provides a distinctive savory taste2 pieces
Salt½ tsp
Garlic1 tbsp
Five spice powder½ tsp
Onion powder½ tsp
Red yeast rice powderOptional; can be omitted or replaced with red food coloring for color1 tbsp
Tapioca starch slurryUsed to thicken the sauce~1-2 tbspest.
Steps

Combine the sugar, honey, soy sauce, fermented bean curd (or miso), salt, garlic, five spice powder, onion powder, and optional red yeast rice powder in a pot.

Simmer the mixture over low heat, stirring frequently, for a few minutes to reduce and concentrate the sauce.

Stir in the tapioca starch slurry to thicken the sauce so it will cling well to the meat.

Once cooled, store the sauce in the fridge for up to a month; this batch is enough to season about 2.5 pounds of pork for char siu.
