Finely dice the shallots into small cubes and mince the garlic. Sprinkle salt over the garlic and crush it with the back of the knife into a paste—the salt helps break it down more easily.

Heat a small amount of olive oil in a pan, add the shallot and garlic mixture, and gently sauté over low heat until soft.

When the shallots are soft, reduce heat and add fresh oregano (or dried oregano) to allow the herbs to release their flavors. You can also add thyme or other fresh herbs if desired.

Transfer the shallots and garlic to a bowl, then add red wine vinegar (or white wine vinegar), mustard, honey, salt, and pepper.

Use a whisk to thoroughly combine all the spices and seasonings in the vinegar. This step is important because once the oil is added, it will be harder to dissolve the seasonings.

Slowly drizzle the olive oil in while continuously whisking, watching as the dressing gradually thickens and emulsifies. Using an immersion blender works even better for superior emulsification.

Finally, chop the fresh basil and stir it in. Note that fresh herbs will gradually lose their color in the refrigerator, but this doesn't affect the taste.

Pour the finished dressing into a clean glass jar, leaving some space at the top to allow for shaking before use. Refrigerate until needed, and shake well before each use.
