Remove the tenderloin from the chicken breast and cut the chicken lengthwise into thin strips of even width.

Make the alkaline batter by combining egg white, baking soda, cold water, plain flour, and cornstarch. Mix together and set aside to allow the alkaline environment to tenderize the chicken.

Prepare the honey sauce by combining cornstarch, rice vinegar, soy sauce, sesame oil, grated garlic, ginger, a quarter cup of honey, and a touch of water. Mix well.

Coat the chicken strips in the alkaline batter.

Perform the first fry: heat the oil to approximately 170°C and fry the battered chicken until cooked through.

Perform the second fry: increase the oil temperature to approximately 200°C to brown and crisp the outside of the chicken.

Add a touch of oil to the wok and pour in the honey sauce. Bring to a boil, then add the fried chicken and toss to coat evenly.

Transfer the honey chicken to a serving plate and garnish with sesame seeds.
