Wash the sweet potatoes and scrub off any mud. No need to peel—just cut away any black or damaged spots, then chop into smaller pieces. Any browning on cut surfaces is natural oxidation and won't affect starch extraction.

Add the chopped sweet potatoes to a food processor in batches, pouring in enough water to cover about half the pieces, and blend into a fine puree. Transfer each batch into a large container.

Line another large container with cheesecloth, pour in all the puree, then gather the cloth and rub/squeeze firmly for 5–8 minutes to wash out the starch and extract as much liquid as possible.

Collect the starch water into a large pot, then add more water to the pulp in the cheesecloth and repeat the rubbing/squeezing for another 5–8 minutes. Repeat this process for 5–6 rounds total, using about 2–3 L of water each round, until little starch remains in the pulp.

Let all the starch water sit undisturbed for 3 hours so the starch settles to the bottom. Carefully pour off the top liquid, leaving the starch behind, and combine the starch from all containers into one large bowl.

Add more water, stir to rinse the starch again, cover it and let it settle overnight in the fridge. The next day, carefully pour off the now-lighter liquid on top.

Transfer the wet starch onto cheesecloth and dry it in a dehydrator at 35°C (95°F) for about 24–36 hours, or sun-dry for 2–3 days if you don't have a dehydrator. Break up dried chunks as you go to speed drying, and stir occasionally to bring moist starch from the bottom to the top.

Once fully dry (about 30 hours total), grind it fine in a blender if you like a fine texture, or crush it by hand for a coarser texture. From 3 kg of sweet potatoes you should get about 438 g of starch (roughly 15% yield). Store in a sealed container at room temperature for up to a year, away from sunlight and moisture.
